"A good high tea for me is that real nice balance of sweet and savoury and of showcasing what we do and how we do it," Executive Chef Volker Marecek shares. Taking advantage of fresh, local produce, the ultra-fresh inspirations include fermented orange, whipped ricotta, walnut butter and radicchio salad and smoked salmon, creme fraiche and lemon tartlet and tasty mustard panna cotta served with beetroot and goat cheese crumble.
For sweet tooths, there's a decadent Black Forest cube with cherry and white chocolate mousse, chocolate brownie, cherry pearls and gold leaf, or take a trip to paradise with the Snix - a peanut butter and dark chocolate ganache tart, with a caramel mousse dome and candied peanuts. A mini Magnum provides an enticing taste of the tropics, with mango and toasted coconut mousse, passionfruit curd, meringues and fresh mango.
Beautifully presented and served on a stylish three-tier stand, sandwiches and a serving of fluffy scones with artisan jam and clotted cream complete the experience, along with your choice of teas or coffees as recommended by our Tea Sommelier.
